This coffee cake is my twist on pound cake \u2014 spiked with rum and warm spices, topped with a crisp streusel. I like to make it for Christmas morning or holiday parties, especially with a mug of hot buttered rum or a glass of eggnog.<\/p>\n\n\n\n<figure class=\"wp-block-image is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"111\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2018\/07\/Leslies-sig-300x111.jpg\" alt=\"\" class=\"wp-image-3321\" style=\"width:181px;height:auto\" srcset=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2018\/07\/Leslies-sig-300x111.jpg 300w, https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2018\/07\/Leslies-sig.jpg 350w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/figure>\n\n\n\n<p>Printable <a href=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2024\/11\/eggnog_crumble_coffee_cake.pdf\">PDF<\/a> of this recipe here.<\/p>\n\n\n\n<p><strong>Makes one 9-inch x 5-inch pan loaf<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"400\" height=\"128\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2023\/10\/ingredients.png\" alt=\"\" class=\"wp-image-5114\" style=\"width:225px;height:auto\"\/><\/figure>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Streusel Crumble<\/strong><\/p>\n\n\n\n<p>\u2153 cup unbleached all-purpose flour<\/p>\n\n\n\n<p>\u00bc cup granulated sugar<\/p>\n\n\n\n<p>\u00bd tsp cinnamon, ground<\/p>\n\n\n\n<p>\u00bd tsp nutmeg, ground<\/p>\n\n\n\n<p>2 Tbsp unsalted butter<\/p>\n\n\n\n<p>2 tsp rum or brandy<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Coffee Cake<\/strong><\/p>\n\n\n\n<p>2\u00bc cup unbleached all-purpose flour<\/p>\n\n\n\n<p>2\u00bd tsp baking powder<\/p>\n\n\n\n<p>\u00bd tsp salt<\/p>\n\n\n\n<p>\u00bd tsp nutmeg, ground<\/p>\n\n\n\n<p>\u00bd tsp cinnamon, ground<\/p>\n\n\n\n<p>\u00bc tsp cloves, ground<\/p>\n\n\n\n<p>2 sticks unsalted butter, room temperature<\/p>\n\n\n\n<p>1 cup granulated sugar<\/p>\n\n\n\n<p>\u00bc cup brown sugar<\/p>\n\n\n\n<p>1 Tbsp pure vanilla extract<\/p>\n\n\n\n<p>1 Tbsp rum or brandy<\/p>\n\n\n\n<p>2 eggs<\/p>\n\n\n\n<p>1\u00bd cups eggnog<\/p>\n<\/div>\n<\/div>\n\n\n\n<figure class=\"wp-block-image is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"400\" height=\"142\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2023\/10\/directions.png\" alt=\"\" class=\"wp-image-5115\" style=\"width:223px;height:auto\"\/><\/figure>\n\n\n\n<p>Preheat oven to 350\u00b0F. Line a 9-inch x 5-inch loaf pan with parchment paper, allowing the ends to extend above the sides of the pan. Set aside.<\/p>\n\n\n\n<p><strong>Streusel Crumble&nbsp;&nbsp;<\/strong><\/p>\n\n\n\n<p>In the bowl of a stand mixer fitted with the paddle attachment, combine all the streusel ingredients. Mix on medium-low speed until the mixture is combined and has a coarsely crumbled texture. Transfer to a separate bowl and set aside.<\/p>\n\n\n\n<p><strong>Coffee Cake<\/strong><\/p>\n\n\n\n<p>In a medium bowl, sift together the flour, baking powder, salt, nutmeg, cinnamon, and cloves. Set aside.<\/p>\n\n\n\n<p>In the stand mixer bowl, add the butter, granulated sugar, and brown sugar. Mix on medium speed for 3\u20135 minutes until fluffy. Add the vanilla extract and rum or brandy, mixing for an additional minute.<\/p>\n\n\n\n<p>Add the eggs one at a time, mixing well after each addition and scraping down the sides of the bowl to be sure everything is incorporated.<\/p>\n\n\n\n<p>On low speed, alternate adding the sifted dry ingredients and the eggnog to the batter in three additions. Mix until just incorporated. Scrape the sides of the bowl as needed.<\/p>\n\n\n\n<p>Scoop the batter into the prepared loaf pan, smoothing the top. Sprinkle the streusel crumble evenly over the batter. Bake for 45\u201350 minutes, or until golden brown and a toothpick inserted into the center comes out clean.<\/p>\n\n\n\n<p>Let cool for 1 hour.
