Tartines, warm open-faced sandwiches, are a staple in Parisian caf\u00e9s and bistros \u2014 and the quality of the bread is paramount. Our MadRy Sourdough Bagels provide a sturdy base for the toppings, and their subtle sourdough taste complements the other flavors. Additionally, the bagel&#8217;s center hole is ideally suited for nestling the porchetta, creating a snug pocket to perfectly cradle an egg for baking. They all work well in this recipe.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-3321 alignnone\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2018\/07\/Leslies-sig-300x111.jpg\" alt=\"\" width=\"147\" height=\"58\" \/><\/p>\n<p><strong>Printable <a href=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2023\/11\/blog_breakfast_bagel_tartines.pdf\">PDF<\/a> of this recipe here.<\/strong><br \/>\n<strong>Makes 4 tartines.<\/strong><\/p>\n<p><strong><span style=\"font-size: 24px;\">Breakfast Bagel Tartines<\/span><\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-5114\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2023\/10\/ingredients.png\" alt=\"\" width=\"156\" height=\"50\" \/><br \/>\n1 pint cherry tomatoes<br \/>\n3 Tbsp olive oil<br \/>\n2 cup fresh chopped herbs (parsley, basil, or oregano work well), divided<br \/>\n\u00bc tsp kosher salt<br \/>\n2 Macrina MadRy Sourdough Bagels<br \/>\n2 Tbsp unsalted butter, at room temperature<br \/>\n\u00bd cup (4 oz) spreadable cream cheese<br \/>\n4 slices porchetta<br \/>\n4 eggs<br \/>\n\u00bc cup grated Parmesan cheese<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-5115\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2023\/10\/directions.png\" alt=\"\" width=\"139\" height=\"52\" \/><\/p>\n<p>Preheat your oven to 350\u00b0F and line two rimmed baking sheets with parchment paper.<\/p>\n<p>In a bowl, gently toss the cherry tomatoes with olive oil. Arrange the tomatoes on one of the prepared baking sheets. Sprinkle with half of the fresh herbs and the kosher salt. Roast for 10 minutes or until the tomatoes are just beginning to brown. Remove from the oven and set aside.<\/p>\n<p>Slice the bagels horizontally to maintain their ring shape and arrange them, cut side up, on the second baking sheet. Butter the bagels and toast in the oven for 3 minutes.<\/p>\n<p>Spread a quarter of the cream cheese on each bagel half. Add a slice of porchetta on top, nestling it into the bagel hole to create a pocket. Carefully crack an egg into each pocket and garnish each with a quarter of the roasted tomatoes and a Tbsp of Parmesan cheese.<\/p>\n<p>Return to the oven and bake for 7 to 8 minutes, or until the eggs are just set.<\/p>\n<p>Finish by sprinkling the remaining herbs over the tartines.
