Now, to the four original flavors\u2014Plain, Sesame, Poppy, Sea Salt\u2014we\u2019re adding the Everything Bagel.\u00a0We coat our Everything Bagel, top and bottom, with a mix of white and black sesame seeds, blue poppy seeds, salt, fresh garlic and onion. Most producers use dehydrated onion and garlic flakes, but we were determined to use fresh ingredients.<a href=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2020\/10\/everything_bagels_spread2_2020_H.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4096\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2020\/10\/everything_bagels_spread2_2020_H.jpg\" alt=\"\" width=\"750\" height=\"500\" \/><\/a><\/p>\n<p class=\"p1\">\u00a0\u201cWe had a tough time initially with the chopped garlic burning, but after much trial and error came up with a great result,\u201d says Leslie Mackie, Macrina\u2019s founder.<\/p>\n<p class=\"p1\">\u201cThe well-balanced taste of garlic and onion melds nicely and doesn\u2019t overpower the flavor from the seeds and sourdough,\u201d says Blake Gehringer, Macrina\u2019s Production Manager.<\/p>\n<p class=\"p1\">Our\u00a0MadRy\u00a0Organic Sourdough Bagels are hand-rolled, given a slow, cool 24-hour ferment, and have just a hint of rye, which adds to their depth of flavor. The caramelized crust has a glossy sheen and the airy interior has a tight, springy crumb that balances the mild tang of sourdough with just enough malty sweetness.<\/p>\n<p class=\"p1\">All of our ingredients come from the PNW:<\/p>\n<p class=\"p1\">\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0The organic high-protein flour comes from just north of the border.<\/p>\n<p class=\"p1\">\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0The organic barley malt powder comes from Skagit Valley Malting.<\/p>\n<p class=\"p1\">\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0The organic rye flour comes from Fairhaven Mill in nearby Burlington.<\/p>\n<p class=\"p1\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4095\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2020\/10\/everything_bagels_2020_H.jpg\" alt=\"\" width=\"750\" height=\"500\" \/>We start with a significant percentage of organic sourdough starter and a smidge of yeast. After an initial rise, we handroll the bagels and give them a full day\u2019s cool ferment. The depth of flavor you\u2019ll taste in these bagels comes from the natural leavening and that hint of rye.\u00a0\u00a0The whiff of sourdough you get when you tear one open comes from the starter.
