They just taste better.\u00a0<\/span><span data-contrast=\"auto\">Until our recent collaboration with PCC Community Markets on our organic Whole Grain Baguette, we hadn\u2019t considered going through the official certification process.\u00a0<\/span><span data-contrast=\"auto\">S<\/span><span data-contrast=\"auto\">haring PCC\u2019s dedication to\u00a0<\/span><span data-contrast=\"auto\">local\u00a0<\/span><span data-contrast=\"auto\">organic\u00a0<\/span><span data-contrast=\"auto\">farms, we decided it was time to make it official\u00a0<\/span><span data-contrast=\"auto\">for<\/span><span data-contrast=\"auto\">\u00a0<\/span><span data-contrast=\"auto\">our\u00a0<\/span><span data-contrast=\"auto\">breads\u00a0<\/span><span data-contrast=\"auto\">that\u00a0<\/span><span data-contrast=\"auto\">already\u00a0<\/span><span data-contrast=\"auto\">feature<\/span><span data-contrast=\"auto\">\u00a0<\/span><span data-contrast=\"auto\">100%\u00a0<\/span><span data-contrast=\"auto\">organic\u00a0<\/span><span data-contrast=\"auto\">ingredients<\/span><span data-contrast=\"auto\">: Whole Grain Baguette, Skagit Sourdough, Sour White, and\u00a0<\/span><span data-contrast=\"auto\">Sour White\u00a0<\/span><span data-contrast=\"auto\">Ficelle<\/span><span data-contrast=\"auto\">.\u00a0<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<p><a href=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/03\/IMG_4221-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-3541\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/03\/IMG_4221-1.jpg\" alt=\"Organic Cairnspring Mills Flour\" width=\"450\" height=\"597\" \/><\/a><\/p>\n<p><span data-contrast=\"auto\">Becoming\u00a0<\/span><span data-contrast=\"auto\">certified is no small feat. The <a href=\"https:\/\/www.ams.usda.gov\/about-ams\/programs-offices\/national-organic-program\">USDA\u2019s National Organic Program<\/a> sets the standards. Foods that are certified organic are based on farming methods<\/span><span data-contrast=\"auto\">\u00a0that don\u2019t rely on toxic pesticides<\/span><span data-contrast=\"auto\">, and that maintain soil fertility and replenish it\u00a0<\/span><span data-contrast=\"auto\">with only\u00a0<\/span><span data-contrast=\"auto\">natural fertilizers. Independent third-party officials routinely inspect organic farms and processing facilities to ensure they are meeting all USDA organic standards. Not only is it good for the local ecosystem, but it often produces the best tasting food.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<p><a href=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/03\/IMG_4226-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-3542\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/03\/IMG_4226-1-768x1024.jpg\" alt=\"Organic Cairnspring Mills Flour\" width=\"450\" height=\"597\" \/><\/a><\/p>\n<p><span data-contrast=\"auto\">We worked with <a href=\"http:\/\/www.qai-inc.com\/\">Quality Assurance International (QAI)<\/a> to obtain our certification. First, we had to ensure that every ingredient, from farm to\u00a0<\/span><span data-contrast=\"auto\">supplier<\/span><span data-contrast=\"auto\">, is organic and handled in strict accordance with all USDA organic standards. We also had to be sure that all of our internal processes met\u00a0<\/span><span data-contrast=\"auto\">the same\u00a0<\/span><span data-contrast=\"auto\">USDA\u00a0<\/span><span data-contrast=\"auto\">qualifications<\/span><span data-contrast=\"auto\">. There can be no risk of cross-contamination with non-organic ingredients, which meant designing an organic-only section of our bakery, a dedicated organic-only mixer, strict tracking procedures for all ingredients, and an exhaustive cleaning process for our ovens before baking our organic loaves.\u00a0<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">We received our official organic certification on December 26, 2018, it took about six months to make it official. <a href=\"https:\/\/blog.macrinabakery.com\/blog\/meet-family-blake-gehringer\/\">Blake\u00a0<\/a><\/span><a href=\"https:\/\/blog.macrinabakery.com\/blog\/meet-family-blake-gehringer\/\"><span data-contrast=\"auto\">Gehringer<\/span><\/a><span data-contrast=\"auto\">, Macrina\u2019s\u00a0<\/span><span data-contrast=\"auto\">Food Safety<\/span><span data-contrast=\"auto\">\u00a0General Manager<\/span><span data-contrast=\"auto\">, oversaw the intensive process. The application alone was 30 pages. Then a great deal of thought had to go into everything<\/span><span data-contrast=\"auto\">\u00a0from color-coded storage containers to new baker\u2019s couches<\/span><span data-contrast=\"auto\">\u00a0and<\/span><span data-contrast=\"auto\">\u00a0intensive training for all of our bakers.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<p><a href=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/03\/skagit_sour_dough_loaf_2018-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-3540\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/03\/skagit_sour_dough_loaf_2018-1.jpg\" alt=\"Skagit Sourdough\" width=\"450\" height=\"669\" \/><\/a><\/p>\n<p><span data-contrast=\"auto\">I\u2019m proud of our decision to certify these breads as organic. Walking through the wheat fields at the Williams Hudson Bay Farm, one of the largest Certified Organic and Salmon-Safe farms in the region located near Walla Walla, it\u2019s hard not to be humbled by their dedication to organic farming. It\u2019s not the easiest way to do things, but it ensures a healthy and sustainably grown product and promotes soil and water conservation. We\u2019re also fortunate that we have local mills, such as\u00a0<\/span><span data-contrast=\"auto\">Cairnsprings<\/span><span data-contrast=\"auto\">\u00a0Mill and Fairhaven Organic Flour Mill, that can\u00a0<\/span><span data-contrast=\"auto\">produce<\/span><span data-contrast=\"auto\">\u00a0<\/span><span data-contrast=\"auto\">small-batch organic flours for us.
