It\u2019s also where Tom and Ray Williams grow the wheat for the new <a href=\"https:\/\/www.macrinabakery.com\/bread-menu.php\">Whole Grain Baguette<\/a> that Macrina Bakery has\u00a0created in collaboration with PCC. This past summer I visited the Williams Hudson Bay Farm to meet Tom and Ray. Their grandfather had moved West from Kansas and farmed the same land they use today, though the farm has now grown to 3,000 acres. They grow a diverse range of crops. It was mind-boggling learning how they manage the complexity of a modern organic farm.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3502\" src=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/01\/combine_walla_walla_2018.jpg\" alt=\"\" width=\"1000\" height=\"667\" srcset=\"https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/01\/combine_walla_walla_2018.jpg 1000w, https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/01\/combine_walla_walla_2018-300x200.jpg 300w, https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/01\/combine_walla_walla_2018-768x512.jpg 768w, https:\/\/blog.macrinabakery.com\/blog\/wp-content\/uploads\/2019\/01\/combine_walla_walla_2018-450x300.jpg 450w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>As we toured the farm in the summer heat, Tom and Ray explained three essentials to organic farming: cover crops, effective pest management and crop rotation. Portions of the farm are designated for animals, which provides meat, but also manure for fertilizer. Having an understanding of the whole operation and feeling the nearly mature grains in my hands gave me a new reverence for their flour. Tom and Ray hold the same core values that PCC and Macrina share. This is what makes this partnership so unique.
